This one is popular overseas.It won first place at the U.S. National Sake Appraisal. A soft and mellow flavor with a refreshing sourness plays into a pleasant aftertaste. Of course it pairs well with seafood and even western cuisine, as though it were wine. The scent of the malted rice is quite subtle so it's recommended to those who prefer white wine.

From the underground water of the sacred mount Haku-San
"Tengu's Shimizu".
"Tengu's Shimizu" is Clear clean water.
Water sourced from the sacred Mount Haku. There are many folktales of Tengu around the vicinity of the Zen temple・Jikou-ji pulling other Tengu into the "Tengu's Shimizu". The purified 150 year old underground soft water is perfect for brewing sake because of the slight acidity. The soft and sweet water isn't only used for sake, but also for washing the rice and tools.
